   Mexico, enchiladas or chilaquiles, chile I don’t know, Colombia the "bandeja paisa", ecuador don’t know, peru ceviche of course

   Columbia- Columbian Beef a Sweet Potato Stew
   Ecuador- Ecuadorian Corn Salad
   Peru- Peruvian Pound Cake

   Chile- Consome de Ave
   Colombia- Ajiaco
   Ecuador- Aji
