    Been a vegie for about 2 yrs and im getting bored with the usual stuff and recipies.

      Baked Corn

      An old-fashioned baked corn recipe. Everyone asks for the recipe.

      INGREDIENTS:

      2 cups whole kernel corn
      1/4 cup chopped onion
      1/4 cup green bell pepper, chopped
      25 g margarine
      2 tablespoons all-purpose flour
      1 teaspoon salt
      ground black pepper
      3/4 cup milk
      1 egg
      1/3 cup cracker crumbs
      1 tablespoon butter, melted ( = 15 g )

      DIRECTIONS:

      Preheat oven to 350 degrees F (175 degrees C).
      In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
      Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
      Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

      Zucchini and Potato Bake

      This is a very easy and delicious dish that I like to make as a side dish for my summer barbecues.

      INGREDIENTS:

      2 medium zucchini, quartered and cut into large pieces
      4 medium potatoes, peeled and cut into large chunks
      1 medium red bell pepper, seeded and chopped
      1 clove garlic, sliced
      1/2 cup dry bread crumbs
      1/4 cup olive oil
      paprika to taste
      salt to taste
      ground black pepper to taste

      DIRECTIONS:

      Preheat oven to 400 degrees F (200 degrees C).
      In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
      Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

      Try grilling some veggies ,
      mariante them in some good Olive Oil Oil preferably extra -Virgin , with
      chopped Shallots
      fresh Herbs ..Basil , thyme ,
      minced Garlic
      salt& fresh ground Pepper
      some good Balsamic vinegar or frsh lemon juice to taste
      the possibilities are endless

      I’ve made tofu parmesan. I don’t have a recipe, but here’s how i make it-

      Take a block of tofu and split it in half, or into 2 layers, to make 2 blocks. Drizzle it with olive oil and dredge it in Italian seasoned breadcrumbs.
      I cook mine on a George Forman Grill. I like the way it presses tofu and gives it more texture. If you don’t have one, you can just bake the tofu in the oven, i would say at 350 for about 15 mins, or you can fry it stove-top. Whichever way, cook it until it’s crispy, then serve on spaghetti with marinara sauce and lots of parmesan cheese.

      (of course if you’re vegan, omit the cheese and call it… tofu… spaghetti.)

      Here’s a Greek recipe I make all the time. I don’t use measurements, though, and I only use fresh veggies (except the canned tomato). It’s called Briami:

      2 potatoes, peeled and cut into 2" cubes
      2 zuccini, sliced
      1-1/2 lbs. green beans, snapped in half
      1/2 red onion, thinly sliced
      2-4 garlic cloves, crushed (adjust to your taste)
      1 can ready-cut tomatoes, including juice
      1/2 cup olive oil (approx. – I just eye it)
      2 T oregano
      salt and pepper to taste

      Mix everything together in a large, covered casserole dish. Bake at 400 F for 1-1/2 hours, then continue baking uncovered for an additional 30 minutes, until the potatoes are soft.

      You can also add whatever veggies you like, such as asparagus, eggplant, just experiment with whatever you want.

      gilled portabello mushrooms, spinkle on mushrooms, balsomic vinergar little bit, salt pepper, use can use some steak sauces that are veggie but not all are, use very little, grill over coals till you start to smell them or if not sure about 6-9 minutes then flip for 3-5 more

      spicy zucchini
      In a frying pan heat 1 tbsp of oil, then add 1tbsp of Fennel seed and 1 tbsp of coriander seeds –heat until sizzles 30 sec, then in single layer add 2 zucchini cut into rounds cook for 6-8 min until lightly brown
      SOOO yummy

      Bean and mint salad
      2 cups of both green beans AND peas
      8 scallions trimmed and sliced
      1 large bunch of mint
      3tbsp olive oil
      grated zest and juice of one lemon
      salt and pepper
      Crumble feta (optional)

      Boil water then add beans and peas cook 3 min, remove and cool under cold water,
      Put scallion and mint in a bowl and peas and beans then sprinkle with olive oil, lemon zest, and juice , salt , pepper, add feta toss well.

      Braised fennel
      2 fennel bulbs trimmed and cut in half
      2tbsp Olive oil
      1/3 cup for Parmesan cheese

      boil fennel in water for 6-8 min then in shallow baking pan place fennel, sprinkle Olive oil and cheese cook at 375 for 8 min or until cheese in melted ( the longer you boil the fennel the mellower the taste)

      Spicy butternut squash

      1 butter nut squash halved and seeded

      in a bowl add 2 tbsp of fennel seed 1 tbsp of coriander seeds, 1 clove of minced garlic and 2 tbsp of Olive oil add squash ensure well coated bake in oven for 15-20 min at 400 until tender when peicered with a fork
