hard to avoid all processed foods-there is so much of it out there!!

here are some things my kids and I enjoy

Italian herbed chicken and brown rice

      4 boneless,skinless chicken breasts
italian seasonings (we like fresh rosemary, basil, and oregano)
      olive oil
brown rice (I buy organic stuff from whole foods-non instant)
      fresh green beans.

season the chicken breasts and brown in skillet w/olive oil until golden brown on both sides and juices run clear (you can also bake them at 350 in a sprayed casserole dish for about 20-25 mins)

      cook rice according to package.

cut up fresh green beans and rinse. boil in pot of water for about 3-5 mins (I add some garlic powder and bacon pieces for flavor).

serve everything together-super healthy and yummy!!

      skewers

-bamboo skewers (soak them in lemon juice prior to using)
      -steak,chicken,shrimp,or pork pieces
      -green bell pepper
      -red bell pepper
      -yellow bell pepper
      -pearl onions
      -pineapple chunks
      -zucchini

cut everything but the pearl onions and pineapple into chunks and slide onto skewers. grill about 2-3 mins on each side

      for breakfast:

      shake:

      1c fat free milk
      1c frozen (or fresh fruit)
1-2 tbsp olive or canola oil (for good fats and protein boost)
ice (only if using fresh fruit)
1/2c plain yogurt (if you want a thicker shake-can omit if not)

blend all together and serve-can add some splenda to make it sweeter

scrambled egg whites, multigrain toast w/apple butter or peanut butter, and 1/2 cup of 100% juice

This is one of my favorite healthy recipes – I don’t cook healthy really

      ZUCCHINI MOONS

      2 small zucchini
1 ts butter – I have used a no calorie ‘fake’ spray butter & the real thing
      2 TB water
      shake of salt
      shake of pepper
      2 ts grated parmesan (optional)

      1. Cut zucchini into rounds about 1/4 " thick. (If your child is doing the cutting, only allow him to use a plastic picnic nknife, and closely supervise his work. Also put a piece of colored tape on the handle of the safe end, and tell your child to keep the hand on the tape. Following these rules, chef Katzen believes kids as young as 3 can learn to cut)

      2. Heat a large pan to medium-hot. Put zucchini, butter & water in the pan. Shake in salt & pepper to taste. Stir & cook approximately 5 minutes. Drain well. Sprinkle cheese on top & enjoy!
